It's amazing how often leftovers taste as good, or even better than, the original meal.
This one is as simple as can be and the Internet doesn't really need a website explaining how to make it, but it definitely falls within the remit of this blog with its money-saving ethos.
I'm saddened by the oft-quoted statistic that Britain throws away about a third of all the food it buys so I do my best never to waste food. I prepared too much potato and parsnip when we had roast duck the other week, but rather than binning it I put it away in the freezer knowing it would come in useful at some point.
There's now so much food in the freezer at the moment that we're actively trying to use it up rather than doing any more shopping so probably the next few weeks of blog posts will be store cupboard specials!
First up, get some water boiling. I'm going to bolster my leftovers with some green veg out of the freezer - specifically sprouts. The sprouts will just need boiling for a couple of minutes before they get added to the frying pan.
Next, get some veg oil going over a fairly high heat. Don't use olive oil for this as it doesn't react well to high temperatures. Throw in the leftover veg and split it up into pieces with the spatula.
When the sprouts have boiled for a few minutes, add them too. Be a bit violent with the contents of the pan now. I like to use a potato masher to bash it all up, which is why I use the stainless steel pan and not a Teflon one. Season with salt, pepper and Worcestershire sauce. I had some mushrooms in the fridge, so I decided to chop a couple up and add them too.
When it's nearly done, picking up some nice brown crispy bits, get the black pudding on the go in another frying pan. This one came already sliced from the wonderful people at Sussex Smokers. It only needs a few minutes on each side.
When the black pudding's nearly done, fry an egg for each person. I was going to poach the eggs, but I couldn't be bothered to get yet another pan on the go - much simpler to just fry them in the same pan with the black pudding.
Taste verdict
Almost better than the original! Leftovers are great. Lovely black pudden, too. It might have been a little bit dry without the egg.
Financial verdict
Leftover veg from the last roast dinner - already costed as part of the roast, so I consider them free
Frozen veg (sprouts, spinach, whatever takes your fancy) - pennies, from store

The skinny
Fry leftover veg in hot oil, breaking it all up with a spatula or potato masher as you go. If there's not enough leftovers, boil some frozen veg and add that too.
Add a couple of sliced mushrooms towards the end of the cooking time.
In another frying pan, fry a slice of black pudding and an egg for each person.
