Broccoli Soup


This has to be the easiest dish I've ever made - but it doesn't lose out on flavour!  Simplicity really is often key.  I knocked this up in about ten minutes before going to bed, destined for the freezer and lunches at work this week.

Just cut up your broccoli and boil it in vegetable stock until a knife slides in easily (takes less than ten minutes)...


...transfer to the blender along with a little of the cooking water, the cream left over from the other night's creamed chard, a handful of grated cheese, a spoonful of horseradish sauce, and salt and pepper.


Whiz up until you have achieved soup.  Transfer to tupperwares and freeze, ready for a saucepan or the microwave at work.

I reckon this cost less than £2 for three portions of delicious fresh tasting soup - and it's not much more difficult than opening a pack of ready-made soup!
