Christmas leftover feast!

I know, I know, I know.  I'm an abject failure.  A food blogger who hasn't mentioned the C-word?  Well, I do have a decent excuse...  I'm working early shifts so I was able to escape the whole roasting thing but instead work a ridiculously quiet shift and then head for my girlfriends' parents, where her mum had cooked a full turkey roast with all the trimmings fit for a small army battalion.

It was delicious, and best of all - I got the leftovers!

So, bubble-and-squeak tonight.  This has got to be the cheapiest, easiest and tastiest thing there is.

All you've got to do is heat oil in a frying pan, tip your leftover potatoes and veg in, mash it up, season with salt, pepper and worcestershire sauce, and fry until tasty.


If you're using a teflon pan, mash the veg first rather than doing it in the pan like I have - you don't want to ruin your non-stick coating!


Meanwhile, arrange some leftover meat on a plate (we got ham, the cat got the leftover turkey - he loves it) and poach an egg.


Serve.  Enjoy.  Make nom nom noises, and think of all the poor silly people who threw their leftovers in the bin.

Oh, I know I've tagged this as vegetarian despite the presence of ham - add a handful of nuts and maybe an extra egg for protein, and this is a cheap and delicious veggie dish all on its own.
